Blueberry Cake Donuts

Ingredients:

For the Donuts:

  • ¼ cup + 1 tbsp melted butter

  • ½ cup cane sugar

  • 2 tbsp honey

  • 2 large eggs

  • ⅔ cup buttermilk (or ⅔ cup milk mixed with 2 tsp vinegar)

  • 1 cup all-purpose flour

  • 1 cup whole wheat flour

  • ½ tsp sea salt

  • 2 tsp baking powder

  • ¾ cup frozen wild blueberries

For the Vanilla Glaze:

  • 1 & ½ cups powdered sugar

  • ¼ cup milk

  • 1 tsp vanilla extract

Directions

  • In a large mixing bowl, whisk together the melted butter, cane sugar, honey, and eggs until smooth.

  • Mix in the buttermilk (or the milk and vinegar mixture) until combined.

  • Pour in the all-purpose flour, whole wheat flour, sea salt, and baking powder on top of

    the wet ingredients.

  • Add the frozen wild blueberries to the dry ingredients on top, coat the blueberries in the dry ingredients, and mix all together, being careful not to overmix.

  • Spoon or pipe the batter into a greased donut pan.

  • Bake in a preheated oven at 400°F (200°C) for about 8 minutes, or until lightly golden and a toothpick comes out clean.

  • While the donuts are baking, whisk together the powdered sugar, milk, and vanilla extract in a bowl until smooth.

  • Let the donuts cool on a wire rack for about 5 minutes. Once cooled, cover them in the vanilla glaze.

  • Serve your delicious wild blueberry donuts warm and enjoy every bite!
