Blueberry Cake Donuts
Ingredients:
For the Donuts:
¼ cup + 1 tbsp melted butter
½ cup cane sugar
2 tbsp honey
2 large eggs
⅔ cup buttermilk (or ⅔ cup milk mixed with 2 tsp vinegar)
1 cup all-purpose flour
1 cup whole wheat flour
½ tsp sea salt
2 tsp baking powder
¾ cup frozen wild blueberries
For the Vanilla Glaze:
1 & ½ cups powdered sugar
¼ cup milk
1 tsp vanilla extract
Directions
In a large mixing bowl, whisk together the melted butter, cane sugar, honey, and eggs until smooth.
Mix in the buttermilk (or the milk and vinegar mixture) until combined.
Pour in the all-purpose flour, whole wheat flour, sea salt, and baking powder on top of
the wet ingredients.
Add the frozen wild blueberries to the dry ingredients on top, coat the blueberries in the dry ingredients, and mix all together, being careful not to overmix.
Spoon or pipe the batter into a greased donut pan.
Bake in a preheated oven at 400°F (200°C) for about 8 minutes, or until lightly golden and a toothpick comes out clean.
While the donuts are baking, whisk together the powdered sugar, milk, and vanilla extract in a bowl until smooth.
Let the donuts cool on a wire rack for about 5 minutes. Once cooled, cover them in the vanilla glaze.
