Peppermint matcha latte cookies
Ingredients:
Cookies
1 vanilla cake mix
2 tsp of matcha powder
2 eggs
1/2 cup of melted butter
2 crushed candy canes (for garnish)
Peppermint Icing
1/2 cup of softened butter
2 cups of powdered sugar
1/8 tsp of peppermint extract
2 tbsp of heavy cream
Recipe:
In a large mixing bowl, whisk together the box of vanilla cake mix with the matcha powder.
Then, mix in the eggs and melted butter until a dough is formed.
Cover the bowl of dough in saran wrap and place in the fridge for 30 minutes to chill.
Preheat your oven to 350F.
While the dough is chilling, mix together the peppermint icing ingredients using an electric mixer. Transfer to a piping bag and set aside.
Scoop the cookie dough 2 tbsp at a time onto a lined cookie sheet. Gently flatten with a cup.
Bake for 9 minutes. Let the cookies completely cool on the cookie sheet before topping with the peppermint icing and crushed candy canes.
