Cava Inspired Meal Prep

Ingredients:

  • 1/2 cup of shredded brussels sprouts

  • 1 cup of shredded kale

  • 2 cups of cherry tomatoes

  • 4 mini cucumbers

  • 1/2 cup of kalamata olives

Pickled Onions

  • 1 red onion

  • 1/2 cup of apple cider vinegar

  • 1/2 cup of warm water

  • 1 tbsp of honey

  • 1 tsp of salt

Saffron Basmati Rice

  • 1 cup of basmati rice

  • 2 cups of broth

  • 1/4 tsp of salt

  • 1/4 tsp of turmeric

  • 1 tsp of saffron

Crazy Feta

  • 1 jalapeño

  • 1 small red onion

  • 2 cloves of garlic

  • 7 oz package of feta

  • 2 tbsp of olive oil

Hummus

  • 15 oz can of chickpeas

  • 1/4 cup of olive oil

  • 1/2 tsp of salt

  • 1 tbsp of lemon juice

  • 1/4 cup of tahini

  • 2 cloves of garlic

Tahini Date Dressing

  • 1/4 cup of tahini

  • 2 dates

  • 3/4 cup of avocado oil

  • 1/2 tsp of salt

  • 3 tbsp of apple cider vinegar

Harissa Honey Chicken

  • 2.5 lbs of chicken breasts (diced)

  • 3 tbsp of olive oil

  • 1 tsp of harissa seasoning

  • 1/4 tsp of cayenne

  • 1/2 tsp of salt

  • 2 tbsp of honey

Recipe:

  • First, start by making the saffron basmati rice—combine all of the ingredients in a pot and bring to a boil over medium high heat. Then, reduce the heat to low and cover. Cook for 10-12 minutes, or until the water is gone and the rice is fully cooked. Let cool and then transfer to a container.

  • Combine the brussels sprouts and kale in a container to make the “splendigreens mix”.

  • Mix together the pickled onion ingredients in a container and store in the fridge. These can be enjoyed after an hour.

  • Then, dice up all the veggies and olives and store in containers.

  • Make the hummus and crazy feta by blending the ingredients in a food processor until smooth. Transfer to containers.

  • Blend the tahini date dressing ingredients until smooth and store in a container. Or you can get a sauce dispenser here to use.

  • Cook the harissa honey chicken—add 1 tbsp of olive oil to a skillet over medium heat. Then, add your chicken breasts and sauté for a few minutes. Mix together the other ingredients in a bowl and pour over the chicken. Cook for about 8 minutes, or until the chicken is fully cooked. Let cool and then transfer to a container.

  • Build your bowl by adding a layer of rice, splendigreens, veggies, pickled onions, olives, chicken, dips, and topping it all with the tahini date dressing!
