Chocolate Cherry Olive Oil Cookies
Ingredients:
1/3 cup of cane sugar
1/3 cup of brown sugar
1/3 cup of olive oil
1 egg
1 tsp of vanilla extract
1/2 tsp of salt
1 cup + 1 tbsp of all purpose flour
1/4 tsp of baking soda
1/2 cup of dark chocolate (I did a blend of chips and chunks)
1/4 cup of pitted and chopped cherries
flaky salt
Recipe:
Preheat your oven to 325F.
In a large mixing bowl, beat together the cane sugar, brown sugar, olive oil, eggs, vanilla, and salt using an electric hand mixer until smooth. Make sure you beat this together for at least 30 seconds—you want it to be creamy.
Mix in the flour and baking soda using a spatula until just combined.
Then, fold in the chocolate and cherries, setting some aside to top the cookies.
Transfer to a lined baking sheet about 2-3 tbsp at a time. 2 tbsp for a regular sized cookie and 3 tbsp for a larger cookie. Top with extra chocolate chunks and cherries.
Bake for 13-15 minutes, or until the edges look set. Then, remove from the oven and let the cookies rest on the pan for at least 10 minutes to set.
Top with flaky salt and enjoy!
