Homemade Fridge Pickles

 

Ingredients:

  • 2 medium Kirby cucumbers, English and Persian cucumbers are a good substitute

  • 1⁄2 cup of water

  • 1⁄2 cup of apple cider vinegar

  • 1 tbsp of honey or cane sugar

  • 1 tsp of salt

  • 3 garlic cloves

  • 2 tbsp chopped dill

  • 1 tsp black peppercorns or cracked pepper

  • A dash of red pepper flakes

Recipe:

  • Slice the cucumbers into chips or spears, whatever you prefer.

  • Using a small mixing bowl, combine the brine ingredients - water, apple cider vinegar, honey, salt, garlic, dill, black peppercorns, and red pepper flakes

  • Put the sliced cucumbers in a mason jar or glass container. The key here is to put them in a tight container. Pour the brine in and seal the jar

  • Let the pickles sit in the fridge for at least an hour and up to a few days. They will be crunchy after an hour, but more soft and flavorful after a few days!
