Pumpkin Coffee Cake Cookies
Ingredients:
1/2 c Chosen Foods Avocado Oil Shortening
1/2 c pumpkin puree, strained
1/2 c cane sugar
3/4 c brown sugar
2 eggs
1 tsp vanilla
2 1/4 c all-purpose flour
1 tsp baking soda
1 tsp salt
1 tsp pumpkin spice
crumb topping
1/4 c all-purpose flour
1/4 c brown sugar
1/2 tsp cinnamon
pinch of salt
4 tbsp Chosen Foods Avocado Oil Shortening
vanilla glaze
1/2 c powdered sugar
1 tbsp heavy cream
1 tsp vanilla
Recipe:
In a mixing bowl, cream together avocado oil shortening, pumpkin puree, sugars, eggs, and vanilla for one minute or until fluffy
In a separate bowl, whisk together flour, baking soda, salt, and pumpkin spice
Mix the dry ingredients into the wet ingredients
Using a cookie scoop, transfer the dough to a parchment paper lined baking sheet. You should have about 12 cookies
Using a spoon, gently flatten each scoop of dough - this is where we’ll sprinkle the crumb topping
Mix together the crumb topping - flour, brown sugar, cinnamon, salt, and avocado oil shortening. Sprinkle a heaping tablespoon of the crumb on each cookie
Chill in the freezer while your oven preheats to 375F
Bake the cookies for 12-14 minutes
Once done, let cool for 5-10 minutes while you whisk together the vanilla glaze - powdered sugar, heavy cream, and vanilla
Transfer the cookies to a serving plate, drizzle with the vanilla glaze and enjoy!
