Pumpkin Coffee Cake Cookies

Ingredients:

  • 1/2 c Chosen Foods Avocado Oil Shortening

  • 1/2 c pumpkin puree, strained

  • 1/2 c cane sugar

  • 3/4 c brown sugar

  • 2 eggs

  • 1 tsp vanilla

  • 2 1/4 c all-purpose flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tsp pumpkin spice

crumb topping

  • 1/4 c all-purpose flour

  • 1/4 c brown sugar

  • 1/2 tsp cinnamon

  • pinch of salt

  • 4 tbsp Chosen Foods Avocado Oil Shortening

vanilla glaze

  • 1/2 c powdered sugar

  • 1 tbsp heavy cream

  • 1 tsp vanilla

 

Recipe:

  • In a mixing bowl, cream together avocado oil shortening, pumpkin puree, sugars, eggs, and vanilla for one minute or until fluffy

  • In a separate bowl, whisk together flour, baking soda, salt, and pumpkin spice

  • Mix the dry ingredients into the wet ingredients

  • Using a cookie scoop, transfer the dough to a parchment paper lined baking sheet. You should have about 12 cookies

  • Using a spoon, gently flatten each scoop of dough - this is where we’ll sprinkle the crumb topping

  • Mix together the crumb topping - flour, brown sugar, cinnamon, salt, and avocado oil shortening. Sprinkle a heaping tablespoon of the crumb on each cookie

  • Chill in the freezer while your oven preheats to 375F

  • Bake the cookies for 12-14 minutes

  • Once done, let cool for 5-10 minutes while you whisk together the vanilla glaze - powdered sugar, heavy cream, and vanilla

  • Transfer the cookies to a serving plate, drizzle with the vanilla glaze and enjoy!
