Spicy Pumpkin Penne

Ingredients:

  • 1 box (16 oz) penne

  • 1/2 cup white onion, diced

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 2 garlic cloves, minced

  • 1/4 tsp salt

  • 1/4 tsp nutmeg

  • 1/4 cup vodka

  • 1/4 cup pumpkin puree

  • 1 cup heavy cream

  • parmesan

  • chopped parsley

Recipe:

  • Bring a pot of salted water to a boil. Cook a box of penne, following the directions

  • While the pasta is cooking, sauté onion in olive oil and butter, over medium heat. After about 3 minutes, add in garlic, salt, and nutmeg. Sauté for another minute

  • Add vodka to the pan. Stir and cook for about a minute. The mixture should be bubbling

  • Stir in tomato paste and pumpkin, until blended. Then, add the heavy cream

  • Pour the pasta in the pan, straight from the pot so that some of the pasta water comes with

  • Serve the penne topped with parmesan and chopped parsley. Enjoy!
