Sourdough Apple Cider Donuts

Ingredients:

  • 1 cup apple cider

  • 1 1/2 cups all-purpose flour

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1 egg

  • 1/4 cup cane sugar

  • 3 tbsp melted butter

  • 1/3 cup sourdough discard

  • 1 tsp vanilla extract

  • 1/4 cup brown sugar

  • 1/2 cup cane sugar

Recipe:

  • Cook down the apple cider in a saucepan over low heat for about 45 minutes. You should be left with 1/4 cup of concentrated apple cider. Let this completely cool before using.

  • In a large mixing bowl, whisk together all-purpose flour, salt, baking powder, baking soda, and cinnamon.

  • In a smaller bowl, whisk together the egg, cane sugar, melted butter, sourdough discard, the cooked down apple cider, and vanilla extract.

  • Pour the wet ingredients into the dry and mix until a dough forms.

  • Then, transfer to a clean floured surface, sprinkle with flour, and flatten until the dough is about 1 cm thick.

  • Next, using a donut cutter (or a glass) cut the dough into circles. I used a lid from a small container to cut the holes in the center.

  • Heat the oil in a cast iron skillet to 330F. Fry the donuts on each side for about 1-2 minutes or until golden brown.

  • Immediately toss the donuts in a cinnamon sugar mixture - cinnamon, brown sugar, and cane sugar.

  • Serve fresh and enjoy!
