Sourdough Apple Cider Donuts
Ingredients:
1 cup apple cider
1 1/2 cups all-purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 egg
1/4 cup cane sugar
3 tbsp melted butter
1/3 cup sourdough discard
1 tsp vanilla extract
cinnamon sugar mixture
1 tsp cinnamon
1/4 cup brown sugar
1/2 cup cane sugar
Recipe:
Cook down the apple cider in a saucepan over low heat for about 45 minutes. You should be left with 1/4 cup of concentrated apple cider. Let this completely cool before using.
In a large mixing bowl, whisk together all-purpose flour, salt, baking powder, baking soda, and cinnamon.
In a smaller bowl, whisk together the egg, cane sugar, melted butter, sourdough discard, the cooked down apple cider, and vanilla extract.
Pour the wet ingredients into the dry and mix until a dough forms.
Then, transfer to a clean floured surface, sprinkle with flour, and flatten until the dough is about 1 cm thick.
Next, using a donut cutter (or a glass) cut the dough into circles. I used a lid from a small container to cut the holes in the center.
Heat the oil in a cast iron skillet to 330F. Fry the donuts on each side for about 1-2 minutes or until golden brown.
Immediately toss the donuts in a cinnamon sugar mixture - cinnamon, brown sugar, and cane sugar.
Serve fresh and enjoy!
