Brussels Sprout Salad with Apple Cider Dressing
Ingredients:
6 pieces of bacon
1 tbsp finely sliced sage
2 tbsp maple syrup
5 cups shaved brussels sprouts
2 tbsp olive oil
dash of salt
1/2 cup apple, diced
1 tbsp shallot, finely diced
1/2 cup pecans, chopped
1/2 cup sharp cheddar cheese, sliced
apple cider dressing:
2 tbsp apple cider
1 tbsp apple cider vinegar
juice of 1/2 a lemon
1/2 tsp dijon mustard
2 tbsp oil
pinch of salt
Recipe:
Preheat your oven to 425F.
Make the sage and maple bacon - lay the bacon on a parchment paper lined baking sheet. In a small mixing bowl, whisk together the sage and maple syrup. Using a pastry brush, coat the bacon in the maple mixture. Bake for about 15 minutes, or until the bacon is golden and crispy. Pat the bacon dry, dice, and set aside.
Next, pan fry the shaved brussels sprouts in oil and a sprinkle of salt. Cook until golden brown, about 10-15 minutes.
Add the brussels sprouts to a bowl or serving plate, along with the apple, shallot, pecans, bacon, and sharp cheddar cheese.
Whisk together the apple cider dressing - apple cider, apple cider vinegar, lemon juice, dijon mustard, oil, and a pinch of salt.
Mix the dressing into the brussels sprouts mixture and enjoy!
