Pumpkin Queso
Ingredients:
2 tbsp butter
1 small yellow onion, diced
2 cloves garlic, minced
4 oz can diced green chilis
2 tsp flour
1/2 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp salt
pinch of cayenne
1 cup heavy cream
1/2 cup whole milk
1/2 cup canned pumpkin
4 oz pepper jack cheese
4 oz sharp cheddar cheese
Recipe:
In a pot over medium heat, melt butter. Add onion and garlic, cook until softened
Next, add the green chilis and stir in the flour, chili powder, paprika, salt, and cayenne. Stir for 30 seconds or until fragrant
Then, stir in heavy cream and whole milk. Continue to stir and cook until the milk starts to thicken
Turn off the heat and stir in the pumpkin and cheeses. Stir until combined and melty
Serve with chips and enjoy!
