Ingredients:

  • 2 tbsp butter

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 4 oz can diced green chilis

  • 2 tsp flour

  • 1/2 tsp chili powder

  • 1/2 tsp smoked paprika

  • 1/2 tsp salt

  • pinch of cayenne

  • 1 cup heavy cream

  • 1/2 cup whole milk

  • 1/2 cup canned pumpkin

  • 4 oz pepper jack cheese

  • 4 oz sharp cheddar cheese

Recipe:

  • In a pot over medium heat, melt butter. Add onion and garlic, cook until softened

  • Next, add the green chilis and stir in the flour, chili powder, paprika, salt, and cayenne. Stir for 30 seconds or until fragrant

  • Then, stir in heavy cream and whole milk. Continue to stir and cook until the milk starts to thicken

  • Turn off the heat and stir in the pumpkin and cheeses. Stir until combined and melty

  • Serve with chips and enjoy!
