Sourdough Brown Butter Chocolate Chip Pumpkin Cookies

Ingredients:

  • 1/2 cup butter, browned

  • 3/4 cup coconut sugar

  • 1 tsp vanilla

  • 1/4 cup pumpkin puree

  • 1 egg yolk

  • 1/4 cup sourdough discard

  • 1 1/4 cup all-purpose flour

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1 cup dark chocolate chips

 

Recipe:

  • Preheat the oven to 350F

  • In a mixing bowl, combine butter, coconut sugar, vanilla, pumpkin, egg yolk, and sourdough discard

  • Mix in the flour, baking powder, and baking soda. Stir until a dough forms

  • Fold in the chocolate chips

  • Spoon 2 tablespoons of dough at a time onto a lined baking sheet

  • Bake for 11-13 minutes. Top with flaky salt and enjoy!
